Mountain Standard Power On Protein Pancakes
Mountain Standard decided to add food to their product line-up a while ago, but we just recently got a bag of their pancake mix and enough campsite energy to try to whip them up. To be honest, we can be pretty lazy campers, especially when it comes to cooking. We put off making these for a couple of trips because we just weren't sure how much work they'd end up being to make and clean up.
Turns out, we shouldn't have waited so long. The Power On Protein Pancakes are going to become a breakfast staple for our longer camping trips. They couldn't be easier to make, and they create almost no mess.
Tear off the top of the bag, add a cup of water, mix, pour, eat. The bag contains almost all of the mess. They didn't stick to our cast iron, even though we forgot to bring anything to grease up the pan. The pan was clean when the cakes were done cooking. We ate them with syrup, so that left us with some sticky spoons and plates that we licked clean. Tasty breakfast!
The details: these pancakes are delicious, but also protein packed. They kept us well-fed for several hours. We got five fairly thick and big pancakes out of the bag, which was more than enough for the two of us. Next time, we may make six, and save two for later. They bag label says it contains 2 servings. Pro tip - remove the little packet of preserver stuff, we almost cooked ours - oops!
These aren't your basic pancakes though... blueberries, quinoa, hemp seed, whole wheat flour... all healthy, and surprisingly delicious. Protein and fiber packed. It's a fair statement to call these a superfood. We were full, and had an active morning after eating these, and didn't find ourselves hungry until it was time for a late lunch! Add some bacon, and I imagine you'd have enough energy to take on any activity filled day.
We opted to top ours with syrup... but can imagine peanut butter, almond butter, bananas, or even just butter, being delicious also.
